Blackcurrant & Walnut Chocolate Brownies

Delicious Blackcurrant and Walnut Chocolate Brownies Made with Spelt Flour

Ingredients

  • 110g butter
  • 100g dark chocolate
  • 25g milk chocolate
  • 160g golden caster sugar
  • 75g organic white spelt flour
  • 2 eggs
  • 100g blackcurrants (fresh or frozen)
  • 100g white chocolate (broken into chunks)
  • 50g Sharpham Park organic walnuts

Method

  1. Melt the Chocolate and Butter: In a bain-marie, gently melt the butter, dark chocolate, and milk chocolate together.
  2. Whisk Eggs and Sugar: In a separate bowl, whisk the eggs and golden caster sugar until well combined.
  3. Mix in Spelt Flour: Stir the organic white spelt flour into the egg mixture.
  4. Combine Mixtures: Pour the melted chocolate mixture into the egg mixture, stirring to combine.
  5. Add Blackcurrants: Fold in the blackcurrants.
  6. Prepare for Baking: Pour the mixture into an oven tray and push the white chocolate chunks into the batter.
  7. Bake: Bake at 180°C for 20 minutes.
  8. Cool and Serve: Remove from the oven and allow to cool before cutting into 16 delicious squares.
